Obesity is a serious disease, but an easily reversible one. Today, many people suffer from this disease simply because of not understanding it. We eat badly without taking time to know what is in our plates; we do not know neither the operation of our metabolism nor the basic rules of dietetics, but especially we do not take this problem seriously. Obesity has become the first epidemic of the humankind history.
It is the first cause of mortality in the USA, and the rest of the world is largely threatened.  Our eating habits have become a delayed-action bomb.  As responsible people, it is necessary for us to take a decision for ourselves and for our children, to react, and to fight against this plague. 

Nowadays, there are many types of diets which will certainly make you lose weight, for a certain period, but is it worth the suffering?  And then, how long will it take you to again your kilos back?  A few years ago, Sophie Reverdi discovered and tested the famous method of Doctor Albert Chocron whose principle is simple:  to eat at will natural and balanced foods according to the principles of hyperproteinemy, without being limited by the number of meals or the amounts. Doctor Chocron achieved an unprecedented success by making his obese patients lose a lot of weight without gastric surgery, nor drugs, while allowing them to vary their food each day, and not to suffer. 

The idea of Sophie, after having lost 40 kilos in a few months, was to develop a program combining the food program of Chocron with a series of other tools which would make it possible for obese people to go through their transformation journey easily and in an almost playful way. 
Her first idea consisted in making a famous chef develop simple and coloured recipes for an eight-week period based on the food list authorized by Doctor Chocron. You will thus find in this logbook marvelously simple and inventive recipes for 60 days to help you vary your meals, which are prepared by the great diet cuisine expert, Laurence Méry, on a daily basis and in a harmonious way.  These southern styled recipes, associated with the other indications that this logbook provides with for your daily organization, will make your weight loss journey a real kids’ stuff.

Patients will be able, if they want, to be involved in the development of the dishes. 
They will be given nutrition courses as well as kitchen workshops where they will learn not only cooking, but also the easy ways to colour and give taste to their daily recipes without adding up calories.

The Adult hyper-proteinic Menu of Doctor Albert CHOCRON

When it comes to losing weight, Doctor Albert CHOCRON prescribes to his patients his diet.  The hyper-proteinic menu is the most adaptable menu to the personality of good eaters, because while eating abundantly, the patient loses weight quickly.  Moreover, this diet generally preserves the muscular mass.  For example, it corrects the excess of weight located on the level of the belly. 

The principle:

 Eat at will and lose weight quickly. 
 Have three meals, two meals depending on your chosen schedule.
 Drink a lot outside meals. 
 Respect the hyper-proteinic balance. 
 Follow the four weeks of the evolutionary food diet.

This can last four weeks or eight weeks with an even more copious and more convivial diet, except contrary to medical advice.
Within the framework of a medical diet, certain studies have shown an improvement of the metabolism of the pancreas and insulin.

Why does it work ?

Proteins require of the organism a lot of energy to be assimilated, and 25 % of them are directly burned by the organism. On the other hand, proteins are very filling and they produce this effect during several hours. Moreover, proteins make it possible to dissolve grease by preserving the muscular mass which consumes more energy even when one is at rest. The number of calories burned at rest is two times more significant after a proteinic meal than after a normal meal. As this diet does not allow the consumption of sugar, this obliges the body to resort to the fats to get what it needs, and that stops hunger naturally.

YOU WILL CONSUME APART FROM VEGETABLES AND FRUIT A LOT OF MEAT AND FISH

Proteins are the cement of the human cell.
For our Smart and Light adult diet, Dr. Albert CHOCRON allocates approximately 700 grams of raw or cooked food for a traditional meal.

The foods prohibited by the doctor to his patient
except contra-indication: 

 Meat and fish broth, soups with potatoes or pastes.
 Greases, margarines, all oils (except following indication), deep-fried food, sauces, stews,
 Mayonnaise, béarnaise sauce. 
 Faisandé game, butchery, canned meat and fish (except natural fish). 
 Pork and lard (except piglet?), sheep (except suckling lamb?) lamb, goose, bred duck.
 Fatty fish:  eel, lamprey, murena, tuna, smoked salmon.
 Starchy foods:  peas, dry beans, lenses, broad beans, chickpeas and split peas. 
 Farinaceous food: pastry, rice, potatoes, Jerusalem artichokes, bread including whole-wheat
 bread, complete toasts, flour-based diet products, cracklings, gluten toasts, cornflakes.  
 Vegetables: corn and beetroots
 Sugar refineries, jams, frosts, honey, candies, chocolate. 
 Pastries, desserts, creams. 
 Cheeses, liquid or powder full cream milk, petit-suisses.
 Fresh fruit except contra-indications. 
 Dry fruit:  grapes, figs, prunes, apricots. 
 Oleaginous fruit:  walnuts, hazel nuts, almonds, peanuts, olives, avocados. 
 Ice-creams and sorbets, except from home sweetened with synthetic sweetening substances,
sodas, syrups, fruit juices. 
 Alcohols:  aperitifs, digestives, wines, beer, cider. 

The doctor’s Advice to his patient:

Drink regularly outside meals and a lot, never feel thirsty.

Eat slightly salted food.

Prepare food without using any fats.

Never be hungry.

Sleep 8 to 9 hours, not less.

Resume physical activities gradually or continue with your usual sport.

Not to use more than 5 grams of paraffin oil for seasoning and that is during the entire day.



Dietetic Gastronomy

To eat well is an act of love for yourself; it is tantamount to offering yourself an interior beauty product.  To prepare a healthy and balanced meal carefully is to cherish the people whom you love. Life has given us such a gift and it is such bliss to respect it and cherish it each day.  This is because the good foods are invaluable companions offering their multiple and delicate riches. Through the Smart and Light menus, I willingly invite you to live it up and enjoy life.

The method of the Smart and Light program scrupulously recaptures the original outline.  It is about eating meat, fish, seafood, vegetables, and fruit whenever you feel hungry.  There is no need to look at your watch, but rather, follow your instincts, and your needs.  I am hungry, so I eat; but I eat only what Nature "naturally" puts at my disposal.  When Sophie Reverdi, an old friend of mine whom I met on the university benches, asked me to have a look at this program and to prepare adapted recipes for it, I did not hesitate at all.  Her concept is a tool that is so logical and powerful that I am profoundly glad to be able to contribute to it. Moreover, I know Sophie’s journey and the struggle she went through since her childhood to escape her destiny of being an obese woman; a past she does not want to remember anymore. The Smart and Light program is revolutionary because it is completely adapted to the dietary habits of obese people who are unable to undertake a long diet, which consists in cheerfully crunching two celery sticks, or in mixing miraculously dietetic powders in a glass of water, without breaking down...  It is through recipes that I prepared for you that I willingly invite you to live it up and enjoy life.
